Panasonic GF-1 $690; World's smallest DSLR with an interchangeable lens system and HD video makes this little sucker an easy pro-quality point and shooter.

Hasselblad 500 series $2,500-7,000; Ol' Hasse here changed the game in the '90s. Medium format, square photos with sharp-as-a-tack Zeiss glass. Pricey but still looks better than digital.
